Garlic Chutney- Healthy way to compliment your breakfast and lunch!

“All happiness depends on a leisurely breakfast” are the words of the late American Journalist and author, John Gunther.  Yes, its an absolute truth as breakfast gives us the energy to survive the whole day. We always get an advice as to not skip our breakfast at any cost. If you have kids, you usually try out different varieties of breakfast daily.

Whatever we cook, be it, breakfast, lunch or dinner, it needs to be healthy and tasty. So, I had a look at this YouTube Channel My World By Anjali YouTube and I saw a video on Garlic chutney Video link. I tried it out myself and it went well with my typical south Indian breakfast of dosa and idlis. Not just with dosas and idlis, you can also pair it up with curd rice, fried rice and so on.

So, I did a little bit of research and found out that Garlic is a storehouse of medicinal values. The presence of a  sulfur compound named Allicin in Garlicrenders it all the medicinal properties as it enters our body through the digestive tract and travels all through the body rendering its potent biological effect to our body.

An ounce serving of garlic contains Manganese, Vitamin B6, Vitamin C, Selenium, Fiber, decent amounts of calcium, copper, potassium, phosphorus, iron and vitamin B1 along with various nutrients which will be automatically getting into our body when we consume garlic-based dishes. The greatest advantage is that it is low in calories so we don’t add up weight if we eat more.

It has also been found out that including Garlic supplements will reduce the chance and severity of common diseases like flu and the common cold. Garlic supplements also aid in reducing the blood pressure of high BP persons. For those with high cholesterol, garlic supplementation appears to reduce total and/or LDL cholesterol by about 10-15%. Garlic contains antioxidants that protect against cell damage and aging.

High doses of garlic supplements have been shown to increase antioxidant enzymes in humans as well as significantly reduce oxidative stress in those with high blood pressure. The combined effects of reducing cholesterol and blood pressure, as well as the antioxidant properties, may help prevent common brain diseases like Alzheimer’s disease and dementia.

So, let’s check out how we can make the garlic chutney.

Ingredients:

  • Garlic Cloves – 20 nos
  • Shallots – 6 nos
  • Dry Red Chilli – 8 nos
  • Kashmiri red chilly powder – 1 tspn (optional)
  • Urad Dal – 1/2 tspn
  • Tamarind – Gooseberry sized
  • Sesame oil- 3 tspn
  • Mustard seeds – 1/2 tspn
  • Curry leaves – 1  strand
  • Asafoetida Powder- 1 pinch

Method of Preparation: 

Take dry red chilli and tamarind ball and add a little amount of boiling water just to immerse them for 5 minutes. We are dipping chilli and tamarind in water so that it becomes easier for us to make the paste.

In the meantime take the garlic cloves and shallots and cut them int halves and add them to a mixie bowl. Add the red chilli- tamarind mix along with the water into the mixie bowl. Now blend it well in a paste form.

Keep a pan on the stove and add three spoons of sesame oil into the pan. Sesame oil is to be used here as it helps the Garlic chutney to be stored as long as 3 weeks in the fridge. Once the oil heats up, add half tspn mustard seeds and 1/2 tspn urad dal and a pinch of asafoetida powder.

Once it splutters, add curry leaves and along with it, add the paste in the mixie bowl into the pan. Now stir the mixture continuously for about 5 minutes till it just becomes a paste format.

Now, shift it to any bowl and have it with your breakfast or lunch. Try it out and watch out my blog for more healthy recipes.

    The medicinal properties of Garlic are really , many. It seems to be a panacea for many ills. The best part is that at the same time it adds flavour and aroma to dishes. The Garlic chutney sounds really tasty and of course packs in the goodness of garlic.
